brewing notes:
13/09/14 - i've decided that because i now have a kegerator ready at home to serve my beers, that i'd like to go back and re-explore and re-invent some of my earlier recipes. so i'm making the angry princess blonde, and also the very first by-myself all grain beer, the fletcher pale ale version 2.0! this one substitutes the amarillo hop additions for columbus but i'll see how it goes. might make a last minute substitution again as i always tend to do!
28/12/14 - made a subtle change to the recipe, just by dropping it's gravity so the beer (if on target) should come in at about 4.7%. fingers crossed i'm on target. will be brewing this guy up in a few days.
02/01/15 - brewed this guy up today. pretty excited for it however my gravity issues are really getting to me. either i've made a big mistake somewhere in my brewing software or the grain mill in the shop is not crushing as well as it should. i think i'll have to check on it so i know what to expect for future batches.
tasting notes:
12/01/15 - had a quick taste of this one while testing the gravity and it has come out quite nice albeit it having a very slight twang. am assuming this is from a significant portion of dextrose added and it should hopefully subside. i will leave this in the fermenter for a while to allow the yeast to completely condition and mature the beer before kegging. hopefully that twang will be gone once i do.
14/01/15 - checked gravity and tasted today. seems to have stopped around 1.008 which i'm completely happy with. yay! had a taste and the slight twang seems to have dissipated however the dry hopping might be a large factor in this. either way, it's tasting good now. might leave it a few more days to let the yeast clean it up some more then crash chill.
21/01/15 - it's been kegged now for three days and kept at 18psi to increase the speed in which the beer carbonates. i have to say, it's not perfect as yet, but damn it's tasting good. i do think it has the ability to improve but i am really enjoying it! after all that, the additions of dextrose and DME (while annoying to do) weren't bad additions to the beer. the beer to my tastes, is a drier, thinner, more sessionable pale ale. by this i mean it is not as heavily-bodied so you don't feel as though one beer makes you full and bloaty and, for a pale ale, i actually like it. will be interesting to see how it improves over the course of the next week or two. it is quite hoppy, with a nice even bitterness that does not linger on the tongue too long. a solid pale ale.
27/01/15 - had some mates try this one on the weekend and they enjoyed it. nothing too stand out in my opinion other than a nice even bitterness which still allows you to drink a good few before you stop. that was my aim. i did detect a slight bit of diacetyl once my beer warmed up so i have now increased the temp of the beer fridge to 20C for a few days in the hope of getting rid of this. again, i've rushed getting the beer into the keg! i will learn one day. overall, really nice so far and i reckon once it's chilled back down again at the end of this week it'll be a ripper.
02/02/15 - sitting back about to watch the superbowl and am sipping on a fletcher pale ale 2.0, and i can honestly say, this is a really nice simple beer. the sharp hop notes have mellowed and while it was quite drinkable earlier on, i feel this week it has really come into its own. not bad for only being in the keg for two weeks. i'll have to get around to snapping a picture. probably tomorrow when i brew up another competition beer.
06/02/15 - i came home today (friday) and was about to sit down and enjoy a few fletcher pale ales and the keg blew! so sad! it's now all finished, and once again i'm out of beer in the house. a bit of a shame as i was really starting to enjoy this beer. had a few friends around not long ago and the three of us definitely polished through a lot of it so i shouldn't be too surprised. the beer has mellowed out quite a lot and it very well balanced now. the hops are in perfect synchronisation. very happy with it. will re-brew this again. i'm lucky that even with the poor efficiency issue, the beer still came out really yum.
