last night i decided to get cracking on a (hopefully) very light bodied, summer time lager. it was my first lager attempt and also my first time for using adjuncts in a beer as well as a different kind of mash schedule. it was made late at night, so there were a few little mistakes made but hey, that's learning (i finished at 4am!). over all, i'm pretty happy with how it came out.
this beer will be a beer i plan on bringing to our family christmas lunch hence using my old address in the name. i grew up on monterey street and have many fond childhood memories of that street, so it has lots of family significance. the beer will be similar to an american premium lager as i used the cascade hop exclusively. i also used a very simple grain bill (only pilsner) and the adjunct i used was rice. the rice is supposed to add a nice smoothness to the beer in the finished product.
when using rice, it's ideal to have a different mash schedule to help with getting all the sugars out of it; so i mashed in at 50C for a protein rest, and then brought it up to mash temp of 64C.
also the little china girl is smidgens away from being drinkable; it's currently a little sweeter than i'd hoped but is hopefully good to go in about a week. the 2015 is now carbonating up too and it has a bit of signature wlp009 banana flavour so it's getting all fruity up in here as i matched it with the passionfruity-ness of the galaxy hop.
pretty exciting shit all up in here. stay tuned.
